Peruvian chef showcases his nuevo latino cuisine at Manoir Hovey

North Hatley, December 1st, 2006 -  Exotic perishables such as mate leaves and amarillo peppers – all flown in from Latin America – as well as other latino staples such as purple corn, lime and coconut are some of the ingredients which will be featured in an eight-course tasting dinner to be served at Manoir Hovey, in North Hatley. For one night only, on December 13, the five-star inn and restaurant will feature the cuisine of Mario Navarrete Jr., chef-owner of Montreal's Raza restaurant. The menu will include delicacies like a white fish ceviche, an empanada stuffed with foie gras and roasted pineaple infused with star anise and served with phyllo pastry and orange zest.

Lima native Navarrete is currently considered one of Montréal’s rising stars. Raza scored 28 out of 30 for its food in the 2006 Zagat guide and was voted one of Canada’s best new restaurants in 2005 by En Route magazine’s prestigious annual guide, and continues to rack up accolades in the media. Renowned restaurant critic Lesley Chesterman wrote of his nuevo latino food in Gourmet magazine: “Peruvian (...) dishes are the mainstay of his menu, all represented in an utterly sophisticated manner”.
“It will be an honour to showcase my version of Peruvian cuisine at Manoir Hovey”, says the 33-year old chef. He is looking forward to cooking alongside Manoir Hovey’s chef Francis Wolf: the two became friends while working at Daniel, one of New York’s top restaurants. Before running his own restaurant, Navarrete rose through the ranks at different high- end kitchens. He cooked under Nuevo Latino superstar Douglas Rodriguez at Alma de Cuba, and with Guillermo Pernot, of Pasión, both in Philadelphia, and also at Montréal’s famed Les Caprices de Nicolas, then in its golden phase.

Navarrete will be cooking with Manoir Hovey’s stellar brigade, led by executive chef Roland Ménard, which has won countless awards over the years, including the Gold Prize for best restaurant in the province.

Sommelier Jean-Denis Côté is carefully selecting South American wines to go with each of the courses that will be served on the big night. The eight-course menu will cost $85 per person, plus tax and service, or $135 with a glass of wine paired with each course.
