The Eastern Townships Restaurants Honored by the 2026 Michelin Guide

It’s no secret: the Eastern Townships are home to a wealth of unique restaurants where chefs showcase their talent through creativity and a deep respect for quality ingredients. In 2025, five establishments in the region stood out by earning recognition from the prestigious Michelin Guide. And in 2026, their excellence continues to be celebrated by the world-renowned culinary guide.

Manoir Hovey

Nestled on the shores of Lake Massawippi, Manoir Hovey stands out for its enchanting setting, warm hospitality, and fine cuisine. Awarded two Michelin Keys, the hotel is recognized for its impeccable service, peaceful atmosphere, and unwavering commitment to excellence. Its restaurant, Le Hatley, highlights the flavours of Québec’s terroir through a modern and refined approach, and was featured among the Michelin Guide’s recommended restaurants in both 2025 and 2026. Also earning recognition is Le Tap Room, the Manor’s chic bistro, where elegance meets conviviality.

Espace Old Mill

Set in a picturesque rural setting in the charming village of Stanbridge East, this restaurant received the Michelin Green Star in both 2025 and 2026 — an honour reserved for restaurants demonstrating outstanding sustainable practices. The passionate team combines culinary artistry and agroecology in dishes that are as delicious as they are responsible. The farm located behind the restaurant supplies the kitchen directly through a four-season greenhouse, gardens, and a root cellar housing more than 45 varieties of vegetables and herbs. This ultra-short supply chain allows the team to create a seasonal, sustainable, and entirely local menu that truly reflects the terroir of Brome-Missisquoi.

Les Mal-Aimés

This restaurant was already among the Michelin Guide’s recommended establishments in 2025. This year, that well-deserved recognition was elevated with the awarding of a Michelin Green Star 2026 to this countryside dining experience, which offers a culinary journey that is both refined and authentic. Located at the heart of a market garden farm, Les Mal-Aimés celebrates locally inspired cuisine, showcasing ingredients grown on-site as well as products from carefully selected artisans and producers from the region and across Québec. What awaits guests? An immersive sensory experience somewhere between rustic farm charm and elegant sophistication, where reclaimed barn wood and fine wines coexist in perfect culinary harmony.

Maison Boire

In Granby, this address also ranks among the Michelin Guide’s recommended restaurants for 2025 and 2026. The restaurant is renowned for its wood-fire cooking techniques, which enhance the richness of flavours while honouring culinary traditions. The menu features premium meats, grilled seafood, seasonal sides, and a warm, welcoming atmosphere. Special mention goes to their gourmet mushroom vertical farm — an inspiring example of controlled-environment agriculture that ensures freshness and exceptional quality.

Vin Polisson

Last — but certainly not least — among the region’s establishments featured on the Michelin Guide’s recommended restaurant list for 2025 and 2026 is Vin Polisson. Located in downtown Sherbrooke in an intimate 25-seat space, the team offers thoughtful and delicious cuisine paired with an impressive selection of natural wines. The menu evolves with the seasons and the chefs’ inspiration, pairing beautifully with the featured wines sourced from Québec, Canada, and northern wine regions. The restaurant charms visitors with its urban atmosphere, warm welcome, and bold approach to gastronomy.

One thing is certain: the Eastern Townships truly have the recipe for gourmet happiness! Whether you’re eager to discover local flavours, passionate about sustainable dining, or a lover of natural wines, these five award-winning restaurants each promise a unique, authentic, and deliciously memorable experience.
