12 Hiking Outings in the Eastern TownshipsTaste the Townships

Having guests over for Easter and wondering what you should serve to drink? Here are four products from the Townships that pair perfectly with classic Easter dishes.
By Marc-Antoine Bergeron
This sparkling wine is created using one of Québec’s greatest natural resources, maple syrup. When you think of maple syrup, you think of sweetness, but not in this case. This is a totally dry sparkling wine (0 g./L) that offers complex aromas of white flowers, red berries, nuts and maple. The wine is aged on laths for 18 months using the traditional method, which produces extremely fine and abundant bubbles. Being sugar free, combined with its freshness and aromatics, allows me to serve it for an Easter brunch.
These aromas pair perfectly with all the components of a hearty lunch, or even a sugar shack meal. The bubbles will also add a festive and digestible dimension to this pairing.
Price: $28
The most emblematic symbol of Easter is certainly the egg. Whether children hunt for them, whether they’re decorated with a thousand colours, or even made of chocolate, Easter eggs are always present. Egg-based recipes are often served for this occasion and I have a fine pairing to offer you. The Vignoble du Ruisseau’s Chardonnay Signature is an elegant wine with light notes of citrus and nuts. It has a nice freshness on the palate, plenty of roundness and a touch of minerality. Perfect with an asparagus frittata and Alfred le fermier cheese.
Price: $30
When you think of Easter, Maple ham comes to mind. To accompany such a dish, a rich smoky red wine is a must. Therefore, I suggest you try Altitude 230 by Domaine Girouard. If you are not yet familiar with Domaine Girouard and their wines, I suggest you do so without delay! This wine has a very fruity, slightly spicy character with a velvety and generous texture, which will surely pair well with the texture of ham. Part of the wine’s aging process is carried out in barrels. The result is these beautiful smoky notes that will blend in with the taste of maple.
Price: $28
Leg of Lamb is another classic Easter meal, and this dish requires a full-bodied wine. However, Québec reds don’t often equate with bolder, full-bodied wines, but this one does! The 2019 Limousin Rouge is made primarily with Sabrevois grapes, a variety that provides leathery, animal aromas. The cuvée is finished with Frontenac Noir and Petite Perle, adding fruit, spice and vegetal notes to the wine. Aging in American and French barrels for 12 months adds a woody flavour, body and tannin to the final product. Plus, this wine is organic and natural!
Price: $23.50
