Le temps des rassemblements est le moment tout indiqué pour vous proposer quelques-uns de mes coups de cœur en matière d’apéro. La clé? Légèreté et simplicité!

Historiquement, le terme « piquette » signifie un vin de table de basse qualité. Néanmoins, cette façon de faire du « vin » est une technique écologique qui redonne une deuxième vie au marc de raisin, et cela permet au producteur de nous offrir un produit totalement différent que le vin. Stéphane Lamarre, vigneron et producteur, nous a gardé son merveilleux marc de raisin après l’avoir pressé pour en faire son vin principal. Ensuite, il y ajoute son jus de pomme pour réhydrater le mout de raisin. Le résultat final est justement parfait pour l’apéro. Ce vin pétillant aromatisé à la pêche et l'eau de rose est bien sec, léger en alcool et l’effervescence est moins agressante qu’un Champagne, ou un crémant.
Pour moi, les bulles sont l’une des meilleures façons d’amorcer une soirée. La cuvée Muse de Léon Courville remplit bien ce rôle. C’est le travail de l’œnologue Amélie Oustau, LA muse derrière ce produit, qui le rend si extraordinaire. Originaire de la Champagne, Amélie s’y connait bien pour créer de merveilleux mousseux. Cette cuvée est élaborée entièrement de Saint-Pépin qui, selon moi, est un cépage parfait pour les mousseux d’ici. C’est un vin avec de beaux arômes de zestes d’agrumes, de fleurs blanches et de pommes. Des bulles fines et abondantes tapissent la bouche avec une pointe de minéralité.
Le cidre de feu est l’item qui a mis Union Libre sur le radar en 2013. Ce cidre dont le jus obtenu est concentré par la chaleur, et qui ensuite est mis dans des barriques pour un léger vieillissement. Cela produit un cidre avec des arômes d’épices douces, de compote de pomme, de noix et de caramel. La texture est très enveloppante et son acidité fraiche tient la longueur en bouche au maximum. La concentration par la chaleur procure un taux de sucre plus bas que les cidres de glace. Je suggère de le prendre avec un ou deux glaçons en apéro, ou même en un cocktail super simple, plaisant et qui a du kick.
Mont-Royal
Préparation : sur glace, verser le cidre de feu apéritif et le sirop de gingembre. Ajouter les quartiers de lime et mélanger.
Longtemps snobé, le Vermouth est aujourd’hui l’un des alcools les plus recherchés, et constitue une base très importante pour plusieurs cocktails. Le vignoble Val Caudalies nous propose deux options : le Vermouth Doux et le Vermouth Sec. Pour les gens qui préfèrent simplement boire le Vermouth tel quel, je propose l’option Doux. Simplement sur glace, vous aurez un apéritif à base de vin frais et complexe. Vous noterez des arômes fruités et d’épices douces, ainsi qu’une douceur en bouche, un léger goût herbacé et une pointe d’amertume. C’est frais et tonifiant!
Pour ceux qui préfère les cocktails, je vous conseille le Vermouth Sec. Tout aussi complexe au nez que la version douce, il offre des arômes d’agrumes, d’épices, de végétaux et d’olives. Bien sec en bouche, le Vermouth Sec procure une texture intéressante. Parfait pour créer vos Martinis.
Dirty Township
Préparation : dans un grand verre, ajouter des glaçons. Incorporer la Vodka, le Vermouth et le jus d’olives. Mélanger à l’aide d’une cuillère puis verser dans un verre à Martini avec l’aide d’une passoire. Décorer avec deux olives sur un pic.
