Ice wine

Did you know that ice wine came about quite by chance? According to the Canadian Encyclopedia, “ice wine” (Eiswein in Geman) was “discovered” in Franconia in 1793 after an unusually cold spell froze the grapes on the vines. The winegrowers, worried about losing their harvest, decided to press the grapes and were pleasantly surprised to find that this resulted in a delicious sweet wine. Ever since then, depending on weather conditions, German vintners have produced Eiswein.
Quebec ice wine is a much sought after premium product. It can be drunk as an aperitif or as a liqueur – either on its own or along with cheese or foie gras.
